Soffey + Apostolos

For local jewellery designer Soffey Stamatelopoulos and Socceroos forward Apostolos ‘AP’ Stamatelopoulos, the stunning gardens of Sunnybrae were the perfect backdrop to this timeless winter wedding

The Theme 

My husband and I were living in Greece at the time, so all our initial wedding planning was done over Skype, FaceTime and emails between two very different time zones! I spent a lot of time researching vendors that I felt aligned with our vision for the day, and we couldn’t have been blessed with a greater team to bring our vision to life from the other side of the world. My vision for the day was modern, timeless, and simple. 

The Dress 

My dress was designed by Cristina Tridente from couture+love+madness. I met her over FaceTime and instantly knew I wanted her to make my dress. I came into the process without any idea of what style I wanted and didn’t even try any on. 

On my first face-to-face meeting with Cristina, we came up with an initial sketch that progressed into a calico toile and then underwent different adjustments at every fitting. Once we started experimenting with different fabrications and details, it really started coming to life and exceeded all my expectations. 

I had never considered sleeves on my dress, but when Cristina showed us her European lace samples, we thought it would be the perfect addition. Cristina and her entire team are incredible – I couldn’t have had a better experience! 

The Location 

Sunnybrae ticked every box for us as a reception location. I was quite nervous about getting married in winter, but the Marquee was perfect.  It was spacious and kept all our guests warm whilst still making the space feel open, with the gorgeous Sunnybrae grounds lit up with fairy lights. 

The Food + Drinks

It was hard to find someone in Adelaide who didn’t have amazing things to say about Jim and the entire Sunnybrae team! They truly went above and beyond. It was the most seamless, stress-free experience. One of the first things people raved about was the food, and this was really important to us having a big Greek family. We opted for the Mezze catering option, and it was absolutely perfect. 

The Highlight

Having lived overseas for two years, the most special moment for us was looking around the room and seeing all the people we love having the most beautiful night together.
